Durian Butter Cake榴莲牛油蛋糕

榴莲飘香时,如果有吃不完的榴莲,可把果肉留下,制成榴莲蛋糕。成品美味非常。

Recipe:
200g butter 牛油
150g castor sugar 细砂糖
4 eggs 鸡蛋
150g durian flesh 榴莲果肉
4tbsp milk 牛奶
200g self raising flour (sifted) 自发面粉

Method:
1. Preheat oven to 170 C
2. Cream butter and sugar till light and fluffy.
3. Add in egg one at a time. Beating well in between each additions.
4. Add in durian flesh, mix well.
5. With rubber spatula, fold in 1/2 of the flour, follow by milk, then fold in the remaining flour.
6. Divide the batter into the paper cups.
7. Bake in preheated oven 170C for 20-25 minutes.

This recipe yields 14 durian cup cakes (square size paper cup).  The cake is soft, moist and rich.  You will be amazed on how aromatic the cake smell when you bake. Yummy!
